WHIPPED FETA WITH ROASTED TOMATOES

Whipped feta may be one of my favorite appetizers/snack dishes.  Not only is it the most delicious flavorful dip but it could not be easier.  3 ingredients, takes 2 minutes to make, and you can of course keep the leftovers in the fridge to snack on throughout the week.

During the summer my parents and I got into a fun habit of sitting in the front yard in the late afternoon.  For years we have had Adirondack chairs sitting in the yard but have never put them to good use until quarantine hit.  You could find us every afternoon before dinner, sipping a cocktail, and enjoying an appetizer while talking to neighbors on their daily walks.

Now THESE, these are my specialty.  Anytime I have a good loaf of Italian or French bread I like to make some bruschetta out of them.  For this recipe I used a french baguette, specifically because they are the perfect two bite size for dipping.

I do prefer to grill these over baking them.  I think that it keeps the chewyness of the bread while also getting that good char around the edge. Baking on the other hand will give that crunch all the way through (which is delicious as well)!

Ingredients

  • 1 Block of feta cheese 

  • 1/3 cup of olive oil 

  • 1/4 cup of water 

  •  1 TBS of salt 

  • 1 Package of cherry tomatoes

  • 2 Cloves of garlic chopped 

  • 2 TBS of olive oil

  • 1 Loaf of fresh French or Italian bread

Directions

  1. Preheat oven to 350 degrees and dress the tomatoes in 2 tbs of olive oil garlic and a sprinkle of salt and pepper. 

  2. Once oven is hot place tomatoes in oven in an oven safe dish and cook for 15 minutes.

  3. On the Grill heat to high to medium-high. Slice your bread in to bite size peaces and bring to the grill along with oil to brush and salt.  

  4. Once grill is hot place all pieces of bread down on grill to toast, this will happen quick so watch carefully. 2-3 minutes. Flip over and brush oil on the toasted side, repeat process for both sides. 

  5. While tomatoes cook, place feta, olive oil and water in a blender or cuisinart, blend until smooth.  Add more water or oil until consistency is desirable. 

  6. Once Tomatoes, Feta, and Bread are ready to be plated put your feta down first spreading it along the bowl topping it with the roasted tomatoes and its roasted oil, put alongside the warm bruschetta.  Enjoy!
