Spicy Pasta alla Vodka

Ingredients:
-
Rigatoni
-
2 Shallots
-
1 Clove of Garlic
-
Red Pepper Flakes to Taste
-
1 TBS of tomato paste
-
1/4 cup of Vodka (or water)
-
1/2 Cup of Heavy Cream
-
1/2 of freshly grated Parmesan
-
Pasta water is reserved as needed

Directions:

Bring your pasta to a boil

Finely chop shallots and garlic
-
In a medium-sized saucepan on medium heat start with a drizzle of olive oil.

Once the pan is hot put your chopped shallots in the pan and cook for 2 minutes.

Add your garlic and red pepper flakes and cook until fragrant.

Add the tomato paste and stir to combine.

Once the tomato paste is mixed in and sizzling add your vodka and stir until evaporated.

Add the Heavy cream and stir to combine.

Add your cooked pasta to the pan as well as pasta water as needed to loosen the sauce.

Take the pan off the heat and slowly add in the parmesan until the sauce is creamy and combined.
