Spicy Pasta alla Vodka 



  • Rigatoni 

  • 2 Shallots

  • 1 Clove of Garlic

  • Red Pepper Flakes to Taste

  • 1 TBS of tomato paste

  • 1/4 cup of Vodka (or water)

  • 1/2 Cup of Heavy Cream

  • 1/2 of freshly grated Parmesan 

  • Pasta water is reserved as needed


  • Bring your pasta to a boil

  • Finely chop shallots and garlic

  • In a medium-sized saucepan on medium heat start with a drizzle of olive oil.

  • Once the pan is hot put your chopped shallots in the pan and cook for 2 minutes. 

  • Add your garlic and red pepper flakes and cook until fragrant.

  • Add the tomato paste and stir to combine. 

  • Once the tomato paste is mixed in and sizzling add your vodka and stir until evaporated. 

  • Add the Heavy cream and stir to combine.  

  • Add your cooked pasta to the pan as well as pasta water as needed to loosen the sauce. 

  • Take the pan off the heat and slowly add in the parmesan until the sauce is creamy and combined. 

  • Finished!
