Rainbow Chard Salad with Lemon Tahini Dressing
For this salad, I wanted to make something that was a twist on the usual kale salad. The rainbow chard caught my eye at the grocery store, and not only does it have the beautiful stem that you include in the salad, but it's a little softer than kale which I enjoy better.
This dressing is so nice and creamy, it's similar to a caesar dressing consistency. Sweet from the honey but very light with the lemon. And the pistachios are the perfect nut to accompany those flavors.
Pistachios are my favorite nut and ice cream flavor. I personally think they are a little underrated.
Ingredients

1 head of chopped rainbow chard

1/2 C cilantro and parsley chopped

1/4 C pistachios

1/4 C feta
For the dressing
-
1 TBS honey
-
2 TBS tahini
-
Juice from 1/2 a lemon

1/4 C olive oil

2 TBS water to thin it out, maybe more
Directions

Combine all ingredients for the dressing together in a jar or bowl and shake till combined.

Add your chopped chard and herbs to the bowl and cover in the dressing.

Toss the salad and top with pistachios and feta, Enjoy!
